Crock-Pot Shredded Chicken

So yesterday happened to be my good friend’s birthday and I was lucky enough to get to make her dinner. Yesterday was also National Taco Day, so what better way to celebrate than to make a ton of tacos?

Spicy shredded chicken and barbacoa tacos. YUM! I am only going to share the shredded chicken recipe today since I am still working on my barbacoa recipe. This chicken is amazing and it is so easy!

I didn’t think this chicken was spicy but if you don’t like any heat at all then swap out the habanero salsa for a more mild jar. Serve shredded chicken with your favorite toppings and you can celebrate tacos any day of the year!

Ingredients

  • 2-3 pounds boneless skinless chicken breast
  • 1 jar of habanero salsa
  • 1/4 cup taco spice (I used a taco blend from the North Market in Columbus, OH)

Instructions

Place chicken in crock pot. Rub seasoning thoroughly over chicken. Add jar of salsa and place lid on crock pot. Let chicken cook for 6+ hours, turning over every few hours. After six hours remove chicken from crock pot and shred with two forks. Return shredded chicken to crock pot and it is ready to serve.
