Here is a lighter twist on pizza: a pastry puff tart with leek, sausage and spinach. This is a simple and quick dish!
This was my first time cooking with leeks and I am in love with them. (I will be making a potato and leek soup very soon because FALL.) I looked up how to cut and clean them and it was very simple. Prepare for your taste buds to be amazed!
Ingredients
- 1/2 lb. ground sweet Italian sausage
- 2 tbsp butter
- 1 leek, cleaned and chopped
- 2 handfuls of spinach, stems removed
- 2 cloves garlic, minced
- 1/4 cup goat cheese
- 3 large basil leaves, chopped
- Salt and pepper
- Red pepper flakes
- 2 tbsp olive oil
- Dash of Parmesan cheese
Instructions
Preheat oven to 375 degrees. Let pastry dough get to room temperature.
Brown sausage and set aside. Melt butter in skillet and add leeks. Sauté for 10-15 minutes to get a nice carmelization. Season with salt and pepper. When done, add spinach and garlic and remove from heat after about two minutes.
Flatten out pastry dough and even it out on baking sheet with fingers. Sprinkle sausage, goat cheese and leek and spinach mixture over top of pastry. Top with basil, red pepper flakes, kosher salt and pepper to taste. Sprinkle finely shredded Parmesan and a drizzle of olive oil. Place in oven and bake for 10-15 minutes.
Garnish with basil, red pepper flakes and and more cheese if desired.
